    The Wild Carrot Salad is fantastic! I set it to rehydrating after breakfast before taking off on the trail (with just a little less than the amount of water suggested) and by the time we stopped for lunch, not only was it ready, but it was great! While my buddies were choking down their granola bars and Gatorade, I was enjoying a REAL lunch. Ya, I shared, but not much.

    For me it's tough to find enough veggies to take on the trail. This turned out to be a keeper. Makes two nice sized portions that my son and I had for lunch, with sandwiches while we were car camping. This would also make an excellent backpacking salad. It would also be pretty easy to separate into 2 single servings.

    Preparation: Once again, it was very easy. Empty the salad mix and currants into the outer Cook-in-Bag, add water, add mayonnaise , squish around and let it sit for 10 minutes. I needed an additional 5 minutes for the carrots to fully rehydrate.

    Taste: Carrots, pineapple and currants in a creamy sauce. It was yummy! Some of the carrots still had a bit of crunch to them but I kind of liked it.

    Munched this down last weekend on the Split Rock River loop. Tasted like my sister-in-law's potluck salad - yum! Fresh veggies that taste good on the trail and don't need heat.

    Planned on having this for lunch while backpacking. Ate 3 bites, not good tasting at all. Ended up disposing the rest of it.

    My friend and I both bought and tried this salad. Neither of us could get it to hydrate enough to even resemble carrots. It was more like cardboard. Didn't like it at all.
