Hearty Chicken, Corn & Bacon Wrap

I
am an adult member of Boy Scout troop 285 in Plano, TX and I’ve been
trying to teach the scouts in our troop about freezer bag cooking. I prepared this no cook lunch during a recent rock
climbing campout and I got
rave reviews from the adults.
1 package 7 ounce chicken breast (optional substitute: ½ cup freeze-dried chicken ) 2 packets shelf stable ranch dressing (5 ounces total) 1⁄4 cup shelf stable bacon bits 1⁄2 cup shelf stable parmesan cheese 1 1⁄2 tsp dried cilantro 1 tsp ground cumin 1⁄4 tsp chili powder 1⁄2 cup freeze dried super sweet corn 1⁄2 cup freeze dried broccoli 1⁄4 tsp granulated garlic 1⁄2-1 cup water

| Pack the corn and broccoli in a sandwich bag and seal tightly. Mark on
it "Add 1⁄2-1 cup water". Pack the cheese, bacon bits and spices in a
tightly sealed snack size bag. Tuck both bags in with the chicken pouch
and the ranch dressing. Bring 2 large tortillas or bread of choice with you as well.
Add
cool
water to the corn and broccoli bag and
let soak for about 10 minutes. Drain off any remaining water carefully.
You can mix up the chicken salad three different ways - in your pot or
bowl,
in the corn bag or carefully in the chicken pouch.
Break the
chicken up with your spoon, fold in the corn and broccoli, then the
ranch dressing. Stir in the seasoned cheese. Spread on wraps, roll up
and enjoy! |
Beef Stew (low water)

Yield: makes about 10oz
When
I backpack into the high country of Nevada weight is a big issue as I
must also pack in all my water. I have several recipes the are light
weight, filling, tasty and very easy and quick to make. One of my
favorite that can be prepared in just a plastic bag if necessary, but
it's better in a small pot is as follows.
¼ cup freeze dried ground beef ¼ cup vegetable blend with tomatoes ½ cup freeze dried potato dices 1 packet of Savory Choice beef broth concentrate Dash of pepper and garlic powder 8 oz water

| Simmer
for 15 min or so in a pot over the Grilliput Compact Grill, (which I
highly recommend for it is very compact and easy to use) till it
thickens a bit, serve with some crackers and a hot cup of coffee and it
will warm and fill 2 people. If you prefer to cook this in a plastic
bag then just have all your ingredients already in the bag and add 8oz
of boiling water. Seal the bag and wrap in some spare clothing to keep
warm, shake and knead the bag every 5 minutes for 15 minutes. I use a
grill as I like to warm my crackers or bread at the same time. This is
my “go to” meal after a long cold day. All of the main ingredients and the grill are available
from Packit Gourmet and are trail tested by me.

Thai Chicken Curry

This is one of my favorite back country recipes. Prep Time: 15 minutes 2 oz. Coconut Cream Powder 2 oz. Freeze Dried Garden Peas 1⁄2 cup Cashew Pieces 2 oz. Freeze Dried Chicken 1 1⁄2 cup Minute Rice 1⁄2 can Maesri Yellow Curry Paste
At Home Dry the curry paste in your food dehydrator until hard
and crispy. Then place into a food grinder and turn into a powder.

| Repackage the
Coconut Cream Powder into a small Ziploc bag. Package the peas, cashews
and chicken into a small Ziploc bag. Package the rice into a small
Ziploc bag.
On The Trail Boil 4 cups water. Dump
the bag containing the curry powder, coconut cream powder, peas,
cashews and chicken into the pot of boiling water. Cook over a low heat
for 2 minutes. Add rice, stir and remove from heat. Place pot into pot
cozy and let set for 15 minutes. Serve and enjoy. |
Red Chili Stew

On
our first night at our campsite in the Boundary waters in Minnesota I
made one of my husband's favorite recipes, Red Chili Stew. I had never
tried it using dried ingredients but I found it to be very tasty,
especially on a cool evening after a day of kayaking to our site. I found this to be a
fairly light weight addition to our menu as we were very conscious of
weight in our travels. Enjoy! 1-2oz Freeze dried ground beef 2 cups water 3 Tbs tomato paste from a tube (optional substitute: 3 Tbs tomato powder) 1 tsp garlic salt 1 tsp salt 1 Tbs chili powder, or to taste 1 small potato, diced (optional substitute: ½ cup freeze dried potato dices) |  Click to enlarge

| 4 tortillas
505 Southwestern Red Chile Salsa or Green Chile Salsa
Add the first 7 ingredients to a pot and bring to a boil. Reduce heat
to a simmer and cook until most of the water has cooked down. Normally
this takes about 20 minutes but I found it took about 30 minutes in a
Jetboil saucepan. Heat your tortillas in a skillet with a
little olive oil, or cook over your open fire. Put the Red Chili Stew
in the tortillas, add salsa, fold over and enjoy!

Home Made Style Chicken Soup

Here
is a chicken soup recipe that is as close to homemade as you can get
short of carrying a whole chicken and fresh vegetables in your
backpack. It is simple but true comfort food and good for the common
cold!! Freeze dried celery pieces Freeze dried white onion dices Freeze dried green bell pepper dices Freeze dried potato dices Dehydrated carrot flakes Freeze dried chicken Savory Choice chicken broth concentrate Salt and Pepper to taste
*Measurements not given - we used ¼ cup per ingredient & 1 stick broth concentrate

ingredients according to Packit Gourmet package instructions and simmer
all together for 15 to 30 minutes or until desired doneness. Above ingredients can be substituted for vegetarian diets. Use

Packit Gourmet Savory Choice Chicken Broth Concentrate and add or
delete vegetables according to personal preferences. |
